Hello everyone, and welcome back to my blog! Today, I’ll be sharing with you all my grandmother’s recipe for the most amazing lobster risotto. This dish is definitely a luxurious treat, and it’s perfect for impressing dinner guests.

Lobster and rice are simmered in a flavorful broth until they’re both perfectly cooked. Then, the risotto is finished off with a touch of butter and Parmesan cheese. Trust me, this dish is absolutely heavenly.

So without further ado, let’s get started! Ingredients: -1 live lobster (around 1-1.5 pounds)

-1 cup Arborio rice -4 cups chicken or seafood stock -1/2 cup white wine

-1 onion, diced -3 cloves garlic, minced -2 tablespoons olive oil

-1/4 teaspoon saffron threads -1/2 cup Parmesan cheese, plus more for serving -2 tablespoons butter

Directions: 1) Fill a large pot with water and bring it to a boil. Carefully add the live lobster to the pot and cook for 8 minutes. Remove the lobster from the pot and set aside to cool. 2) Once the lobster is cool enough to handle, remove the meat from the shell and chop it into bite sized pieces. Set the meat aside for now. 3) In a medium saucepan, heat up your chicken or seafood stock until it comes to a simmer. Keep it at a simmer throughout cooking. 4) In a large skillet or saucepan over medium heat, sauté onions in olive oil until they’re softened. Add garlic and saffron threads and cook for an additional minute. 5) Add rice to pan and stir well to coat in oil/onion mixture. Toast rice for about 2 minutes until it becomes opaque . 6) Begin adding your hot stock to the rice mixture one ladleful at a time , stirring frequently after each addition . Continue cooking and adding stock until rice is tender but still has some bite left , around 20 – 25 minutes total . You may not need all of your stock . 7 ) Stir in chopped lobster meat , white wine , Parmesan cheese ,and butter . Season risotto with salt & pepper to taste . Serve immediately with extra Parmesan cheese if desired . Enjoy !
