In a large bowl, whisk together the olive oil, white vinegar, Dijon mustard, honey, salt and pepper. Add the cooked pasta and toss to coat. Let the pasta sit for at least 15 minutes so it can absorb the flavors of the dressing.
Add the chopped vegetables and fresh herbs and toss again. If you’re using cheese, add it now. Taste and adjust seasoning as necessary.
Serve at room temperature or chilled. Enjoy!
